The Wilderness Trail Distillery uses modern science to optimize old-world distilling traditions, crafting specialty bourbon & rye whiskeys in small batches of 20 barrels or less at its state-of-the-art distillery in Danville, KY. Founded in 2012 by science-minded fermentation experts Dr. Pat Heist and Shane Baker, many bourbon lovers today know Wilderness Trail as the sweet mash disruptor of the American Whiskey industry, made possible thanks to scientific rigor and ultra-high production standards. From the functional design of the pristine distillery facility, to the 19th century farmhouse at the heart the 168-acre campus, Wilderness Trail seamlessly integrates the best of old and new.
Wilderness Trail whiskeys are for discerning craft bourbon and rye enthusiasts looking for something new – a whiskey that’s a little bit science and a little bit rock and roll.
Unlike most American whiskeys, Wilderness Trail uses a sweet mash fermentation technique, rather than the more widely used sour mash, along with a proprietary infusion mashing process that better maintains grain integrity while using as little energy as possible. The ultimate result is a softer, more grain-flavor-forward-finish that has become a hallmark of all Wilderness Trail’s world-class whiskeys.
